Apples, Carrots, Red Onion and Herbs with Mixed Baby Greens

Serves 4-6

Ingredients

1 apple, cored and cut in half  

1 carrot, cut in half lengthwise

1 medium red onion, thinly sliced                                                                                              

2 cups mixed baby greens

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh parsley, chopped

For the Vinaigrette

1 tablespoon shallot, chopped

1 tablespoon honey

2 1/2 tablespoons red wine vinegar

1 1/2 cup extra-virgin olive oil

1 tablespoon fresh thyme leaves, chopped

Salt and freshly ground black pepper

Instructions

Make the vinaigrette and set aside.

Cut the apple into 1/4-inch slices.  Cut the carrot into 1/4-inch slices.  In a bowl, gently toss the apples, carrots, onion, rosemary and parsley with the mixed baby greens.  Drizzle the vinaigrette over the top.  Season to taste with salt and pepper.
