Baked Salmon with Dill, Lemon, and Olive Oil
Fresh dill adds a spring color and delicious flavor to the salmon in this recipe.Serves 3-4
Ingredients
- 2 sockeye salmon filets , approximately 1 pound total
- 3/4 cup fresh dill , chopped
- 1/2 cup fresh lemon juice
- 1/2 cup olive oil (I used a light tasting olive oil.)
- Sea salt and freshly ground black pepper
Instructions
- Preheat the oven to 350°F.
- Add the lemon juice, olive oil and dill to a small bowl, season with salt and pepper, and gently whisk to combine. Set aside.
- Put the salmon filets in a small baking dish. Spoon half of the dill mixture over the top of the filets. Place in the oven and bake for 25 minutes or until just cooked through. Remove from the oven.
- Transfer the salmon filets to a serving platter. Spoon the other half of the fresh dill mixture over the top of the filets and sprinkle with a little sea salt. Serve immediately.
