
Blistered Shishito Peppers with Green Meyer Lemon, Oregano, and Thyme
This delicious side dish made with farmers’ market fresh shishito peppers and green Meyer lemon was created to celebrate Farmers Market Week.Serves 2-4
Ingredients
- 1 pound shishito peppers
- Juice and zest from 1 green Meyer lemon
- 1 tablespoon fresh oregano leaves , chopped
- 1 tablespoon fresh thyme leaves , chopped
- 2 tablespoons extra virgin olive oil
- Sea salt and freshly ground black pepper
Instructions
- Preheat the oven to 325°F.
- Heat the olive oil in a large cast-iron grill pan over medium-high heat. Add the shishito peppers to the pan and cook for 5 minutes or until they are blistered, flipping them occasionally. Add the Meyer lemon juice, oregano, thyme, and season with salt and pepper. Cook for an additional 1 minute, stirring. Remove from the heat.
- Transfer the shishito peppers to a small baking sheet and put in the oven. Cook for 10-12 minutes or until tender. Remove from the oven.
- Transfer the shishito peppers to a serving plate. Sprinkle the zest over the top. Add a pinch of salt, if desired. Serve right away.
