
Egg, Tomato, Red Onion, Lettuce, and Blue Cheese with Chives and Sage Honey
The sage honey dressing adds a delicious touch to the other ingredients in this salad. The salad pairs nicely with thin toasted bread spread with roasted garlic. 4-6
Ingredients
- 4 hard-boiled eggs , peeled and sliced thin
- 2 early girl tomatoes , sliced thin and cut in half
- 1/2 red onion , thinly sliced
- 4 cups of your preferred lettuce
- 1/4 fresh chives , chopped
- 1/8 cup blue cheese , crumbled
- Dressing
- 2 tablespoons fresh lemon juice
- 2 tablespoons sage honey
- 7 tablespoons extra-virgin olive oil
- Sea salt and freshly ground black pepper
Instructions
- Put the lemon juice and honey in a small bowl. Add the olive oil, season with salt and pepper, and whisk to combine. Set aside.
- Divide the lettuce in individual bowls. Arrange the eggs, tomatoes, and red onion on top. Sprinkle with the chives and blue cheese. Drizzle the sage honey dressing over the top. Season with freshly ground black pepper, if desired. Serve immediately.
