Gaviota Strawberry and Black Pepper Sauce

Makes Approximately 1 Cup

1 cup Gaviota strawberries, hulled and halved

1/2 cup sugar

2/3 cup water

2 tablespoons freshly ground black pepper

Instructions

In a medium pot, bring the water to a simmer over medium heat.  Add the sugar and the strawberries and cook for about 25 minutes, stirring often.  Remove the heat.  Carefully, puree the strawberries in a blender or food processor.  Add the puree to a small bowl.  Stir in the black pepper. 

Use to top meat or as a spread on sandwiches.  If not using right away, transfer to a small jar.  Refrigerate until ready to be served and up to 2 days.
