Goose Egg, Garlic, Broccolini, and Oregano Omelet
Goose eggs from my local farmers’ market! The garlic and charred broccolini combine well with the eggs in this recipe. I like to squeeze a little fresh lemon juice over the top along with a sprinkle of sea salt for an additional flavor.Serves 1-2

- 2 goose eggs
- 1 cup broccolini , ends trimmed
- 6 garlic cloves , chopped,
- 3 tablespoons , plus 1/2 teaspoon extra virgin olive oil
- 1/2 tablespoon fresh oregano leaves , chopped
- Sea salt and freshly ground black pepper
Instructions
- Heat 1/2 teaspoon olive oil in a medium cast-iron skillet over medium-low heat. Add the garlic to the skillet and cook for 1 minute, stirring. Remove from the skillet and transfer to a small bowl. Add 2 tablespoons olive oil to the skillet, increase the heat to medium-high, and add the broccolini. Season with salt and pepper and cook for 2 minutes. Turn over the broccolini and cook for an additional 2-3 minutes or until slightly charred. Remove from the skillet and set aside in a warm place.
- Put the eggs and garlic in a medium bowl. Season with salt and pepper and whisk to combine. Heat 1 tablespoon olive oil in a medium cast-iron skillet over medium-high heat. Pour the eggs into the skillet and cook for 5-8 minutes or until set. Spoon the broccolini evenly on one side of the omelet and fold the other side over. Sprinkle the oregano over the top.
- Transfer the omelet to a serving plate. Serve immediately.
