Roast Cornish Hens with Goat Cheese, Parsley, Sweet Marjoram, Garlic and Artichoke Hearts

Serves 2-4

Ingredients

2 Cornish hens

1/2 cup plain goat cheese

1 cup flat-leaf parsley, finely chopped

1/4 cup sweet marjoram leaves, finely chopped

1 green garlic bulb or 2 garlic cloves, chopped

Juice of 1 lemon

8 artichoke hearts

Sea salt and freshly ground black pepper

Extra-virgin olive oil for drizzling

Instructions

Preheat the oven to 450°F.  Add the goat cheese, parsley, marjoram, and garlic to a small bowl and mix until combined.  Set aside.

Season the inside and outside of the hens with salt and black pepper.  Slide the goat cheese mixture underneath the skin of the hens and truss.  Place the hens and artichoke hearts in a roasting pan and cook for 45 minutes.  Remove from the oven.  Squeeze the lemon juice over the top of the hens and baste with the juices.

Transfer the hens and artichoke hearts to a serving platter or individual plates.  Drizzle a little olive oil over the top.  Serve immediately.
