Grilled Shrimp with garlic, parsley, lemon, thyme and paprika

Serves 4-6

Ingredients

36 uncooked shrimp, deveined

1 garlic clove, minced

1/4 cup flat-leaf parsley, chopped

3 tablespoons fresh thyme leaves, chopped

Zest from 1 lemon

1/2 tablespoon sweet paprika

2 tablespoons extra virgin olive oil

Salt and freshly ground black pepper to taste

Instructions

Add the garlic, parsley, thyme, lemon zest, paprika and olive oil to a large baking pan and mix until combined.  Season with salt and black pepper.  Thread the shrimp on 6 skewers.  Place the skewers in the pan with mixture and gently combine.  Cover and marinate in the refrigerator for 2-6 hours.

Remove the shrimp from the refrigerator and prepare a grill to medium-high heat.  Grill the shrimp until cooked and opaque in the center, approximately 3-4 minutes per side.  Remove from the grill and serve immediately.
