Lamb Loin Chops, Dill, and Green Garlic with Fava Beans
Mild green garlic, lemon, and dill pair well with the flavor of the lamb in this recipe. Locally grown fava beans come together nicely for an overall rustic dish.Serves 4
Ingredients
- 1 to 1 1/2 pounds lamb loin chops
- 1 cup fava beans , shelled
- 3 green garlic bulbs , finely chopped
- 1 cup fresh dill , chopped
- Juice and zest of 1 lemon
- 4 tablespoons , plus 1/2 teaspoon extra virgin olive oil
- Sea salt and freshly ground black pepper
- Lemon slices for serving
Instructions
- Preheat the oven to 350°F.
- Bring water to a boil in a medium pot. Add the fava beans and cook for 2 minutes. Remove from heat, drain, and set aside until cool. When the beans are cool, remove the skins. Put the beans in a small bowl. Add 1/2 teaspoon olive oil, season with salt and pepper, and toss to combine. Set aside.
- Add the garlic, dill, lemon juice and zest to a small bowl. Slowly add 3 tablespoons olive oil, season with salt and pepper, and stir until combined. Set aside.
- Heat 1 tablespoon olive oil in a large cast-iron grill pan over medium-high heat. Add the lamb to the pan. Cook for 2-3 minutes. Turn over and cook for an additional 3 minutes. Remove from heat.
- Coat the lamb on both sides with the garlic and dill mixture. Arrange the fava beans in between and around the lamb. Place the pan in the oven and cook for 20-25 minutes, or until desired doneness. Remove from the oven.
- Transfer to a serving plate. Garnish with lemon slices and serve additional on the side. Serve immediately.
