Preheat the oven to 450°F.
Season the inside of the hens with salt and pepper. Slide the garlic and ginger underneath the skin of the hens and truss. Place the hens in a roasting pan and cook for 45 minutes. Remove from the oven. Add the orange juice to the pan and baste with the juices.
Transfer the hens to a serving platter or individual plates. Serve immediately.
