Roasted Cornish Hens with Orange, Garlic and Ginger

Serves 2-4

Ingredients
  

  • 2 Cornish hens
  • 1/4 cup garlic chopped
  • 1/4 cup fresh ginger chopped
  • Juice of 1 navel orange
  • Sea salt and freshly ground black pepper

Instructions
 

  • Preheat the oven to 450°F.
  • Season the inside of the hens with salt and pepper. Slide the garlic and ginger underneath the skin of the hens and truss. Place the hens in a roasting pan and cook for 45 minutes. Remove from the oven. Add the orange juice to the pan and baste with the juices.
  • Transfer the hens to a serving platter or individual plates. Serve immediately.
