Shishito Peppers with Lemon, Parsley and Oregano

Serves 4-6
Shishito peppers cooked with lemon and fresh herbs. A simple and delicious way to enjoy these little vegetables.

Ingredients
  

  • 25 shishito peppers
  • 3 garlic cloves
  • 1 tablespoon fresh flat-leaf parsley, chopped, plus additional for garnish
  • 1 tablespoon fresh oregano, chopped
  • Juice and zest from 1 lemon
  • 1/4 cup extra-virgin olive oil
  • Sea Salt and freshly ground black pepper

Instructions
 

  • In a large skillet, heat the olive oil over medium-high heat. Add the peppers and garlic to the pan, making sure to cook the peppers on both sides, approximately 4-5 minutes total. Add the lemon juice, parsley and oregano, season with salt and pepper, and cook for an additional minute, stirring.
  • Place the peppers on a large plate. Sprinkle the lemon zest and parsley over the top and serve right away.
