Spiced Pumpkin Bread with Pecans
Makes 1 large loaf
Ingredients
- 6 tablespoons unsalted butter plus additional for pan at room temperature
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 4 large eggs
- 2 cups pumpkin puree
- 1 cup whole milk
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon sea salt
- 1 tablespoon ground nutmeg
- 1 tablespoon ground cinnamon
- 1 tablespoon ground cloves
- 2 teaspoons grated orange zest
- 1 cup pecans chopped
Instructions
- Preheat the oven to 350°F. Butter a large loaf pan and set aside.
- In a medium bowl, combine the flour, baking soda, baking powder, salt, nutmeg, cinnamon, and ground cloves. Set aside.
- In a standing mixer with the paddle attachment, beat together the butter and sugars until combined. Add the eggs and mix for 1 minute. Add the pumpkin puree and milk. Mix for an additional 2 minutes. Add the flour mixture to the bowl and mix until combined. Stir in the orange zest and the pecans.
- Transfer the batter to the loaf pan and place in the oven. Bake for 50-55 minutes. Remove from the oven and let cool for 10 minutes. Remove the bread from the pan and serve.
