Avocado, Tomato, Cucumber, Olives and Feta on Toasted Bread
Serves 4-6
Ingredients
2 avocados, mashed
1/2-pint small cherry tomatoes, halved or quartered if large
1/2 cup cucumber, diced
1/2 cup Kalamata olives, pitted and halved
4 ounces feta cheese, crumbled
Juice of 1/2 lemon
Salt and freshly ground black pepper
Extra-virgin olive oil for drizzling
6 thick slices of sourdough bread, or any other rustic bread, toasted
Instructions
Mash the avocados and set aside. Combine the tomatoes, cucumber, olives and cheese in a medium bowl. Add the lemon juice, salt and freshly ground black pepper and gently toss to combine.
Spread the bread slices with some of the avocado. Top with the tomato mixture and serve right away.
