Summer Squash and Green Bell Pepper Salad with Basil and Parmesan
Serves 4-6
Ingredients
1 yellow summer squash, sliced into thin rounds
1 green summer squash, sliced into thin rounds
1 green bell pepper, sliced into thin strips
A handful of fresh basil leaves, torn
Juice of 1/2 lemon
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
Parmesan, shaved with a vegetable peeler
Instructions
Combine the squash, bell pepper and basil in a medium bowl. Squeeze the lemon over the top and sprinkle with the olive oil. Gently toss to combine. Season with salt and black pepper to taste.
Place on individual plates and sprinkle with the Parmesan over the top. Serve immediately.
