Squid and Shrimp with Arugula

Serves 4-6
Here, hot squid and shrimp and tossed with arugula and fresh herbs provide excellent results. 

Ingredients
  

  • 1 pound calamari , cleaned and pat dry
  • 1 pound shrimp , peeled, deveined and pat dry
  • Zest of 2 lemons
  • 2 tablespoons oregano , coarsely chopped
  • 1/2 cup coarsely chopped , flat leaf parsley
  • Salt and freshly ground black pepper
  • 4 tablespoons extra-virgin olive oil
  • 1/2 red onion , thinly sliced
  • 10 ounces arugula
  • Vinaigrette
  • 2 1/2 tablespoons lemon juice
  • 1 1/2 cup extra-virgin olive oil
  • Salt and freshly ground black pepper

Instructions
 

  • Place the squid, shrimp, lemon, oregano and parsley in a bowl and toss.  Set aside.
  • Make the vinaigrette.  Place the arugula and red onion in a large bowl and toss to combine.  Set aside.
  • Heat a large pan over high heat.  Add the olive oil.  Add the squid and shrimp.  Season with salt and black pepper.  Cook for 3-4 minutes or until just cooked through.  Remove from heat and immediately add to the bowl of arugula and red onion.  Serve on individual plates with additional freshly ground black pepper sprinkled over the top.
