Goat Cheese with Olive Oil, Honey, Mint and Thyme

Serves 2-4

This recipe for goat cheese drizzled with olive oil, honey and herbs is as tasty as it simple to prepare.  Serve it with your favorite crusty bread or vegetables such as carrots. 

Ingredients

4 ounces plain goat cheese

1/2 tablespoon wild honey

1/8 cup extra-virgin olive oil

1/2 tablespoon fresh mint leaves, finely chopped

1/2 tablespoon thyme leaves, finely chopped

Sea salt and freshly ground black pepper

Instructions

Put the honey and olive oil in a small bowl and whisk until combined.  Add the mint, thyme, and salt and pepper and gently whisk.

Place the goat cheese on a board or serving piece of your choice and drizzle the mixture over the top and sides of the cheese.  Spread the cheese on your favorite crusty bread or on carrots.
