Roasted Carrots with Coriander, Thyme, Mint and Cheese
Serves 4-6
This dish is one of my favorite ways of preparing carrots. Roasted, warmed with coriander and balanced with thyme and lemon. The fresh mint and cheese provide an additional touch of flavor and color to this delicious recipe.
Ingredients
10-15 carrots, tops left on, trimmed
2 teaspoons ground coriander
4 fresh thyme sprigs
Juice from 1 lemon
1/3 cup extra-virgin olive oil
Sea salt and freshly ground black pepper
1/2 cup Greek feta, crumbled
1/2 cup fresh mint leaves, chopped
Instructions
Preheat the oven to 450°F. Place the carrots in a large bowl with the coriander, thyme, lemon and olive oil. Season with salt and pepper and toss to coat. Line a baking sheet with parchment paper and spread the carrots out in a layer. Roast for approximately 30-35 minutes. Remove from the oven.
Transfer the carrots to a platter or leave them on the baking sheet. Sprinkle the feta and mint over the top, drizzle with a little olive oil, and serve right away.
