
Baked Omelet with Pea Shoot Leaves and Goat Cheese
Serves 4-6I love the flavors of pea shoot leaves and goat cheese in this omelet. Make this dish on a relaxing spring day.
Ingredients
- 6 large eggs , preferably organic
- 1/2 cup whole milk
- 3 garlic cloves , chopped
- 1/4 cup plain goat cheese , crumbled
- 1 cup pea shoot leaves , coarsely chopped
- Sea salt and freshly ground black pepper
Instructions
- Preheat the oven to 350°F. Butter a 9-inch cake pan. Set aside.
- In a medium bowl, whisk together the eggs and milk. Stir in the garlic and goat cheese. Season with salt and a generous amount of pepper. Pour the mixture into the cake pan and scatter the pea shoot leaves over the top. Bake for 35-40 minutes.
- Remove from the oven and serve immediately.
