Chopped Turkey Bacon, Lettuce, and Tomato with Basil and Ricotta on Toast
This is a chopped version of a “BLT” on toast and makes a great starter to a summer menu. Ricotta mixed with fresh basil and lemon adds a nice flavor and texture.Serves 1-2
Ingredients
- 2 slices turkey bacon
- 3 mini romaine leaves , chopped
- 1/2 cup cherry tomatoes , chopped
- 5 fresh basil leaves , chopped
- 1/4 cup ricotta
- 1 tablespoon fresh lemon juice
- 1 slice from a loaf of rustic bread
- Sea salt and freshly ground black pepper
- Extra-virgin olive oil for serving , if desired
Instructions
- Heat a medium skillet over medium-high heat. Add the turkey bacon to the skillet and cook for 4 minutes per side, or until cooked through. Remove from the heat. Chop the turkey bacon and set aside.
- In a small bowl, add the ricotta, basil, and lemon juice. Season with salt and pepper and mix to combine. Set aside.
- Toast the bread. Spread the ricotta mixture over the toast. Top with the romaine. Sprinkle with the turkey bacon and arrange the tomatoes on top. Season with salt and freshly ground black pepper. Drizzle a little bit of olive oil over the top, if desired. Serve immediately.
