
Shrimp with Garlic, Ginger, Red Chili Pepper, Passion Fruit and Cilantro
Serves 4-6
Ingredients
- 4 garlic cloves , chopped
- 2 tablespoons fresh ginger , chopped
- 1 fresh red chili pepper , chopped
- Seeds and pulp from 1 passion fruit
- 1 tablespoon fresh lime juice
- 1- pound extra-large shrimp
- 1/4 cup extra-virgin olive oil
- Salt and freshly ground black pepper
Instructions
- Put the first 5 ingredients in a large bowl and stir to combine. Add the shrimp, season with salt and pepper and toss. Cover and refrigerate for 1-2 hours.
- Heat a large pan over medium-high heat. Add the marinade and the shrimp to the pan and, stirring, cook for 3-4 minutes or until just cooked through. Remove from the heat.
- Arrange the shrimp on individual plates and sprinkle the cilantro over the top. Serve immediately.
