Put the first 5 ingredients in a large bowl and stir to combine. Add the shrimp, season with salt and pepper and toss. Cover and refrigerate for 1-2 hours.
Heat a large pan over medium-high heat. Add the marinade and the shrimp to the pan and, stirring, cook for 3-4 minutes or until just cooked through. Remove from the heat.
Arrange the shrimp on individual plates and sprinkle the cilantro over the top. Serve immediately.
