Shrimp with Garlic, Ginger, Red Chili Pepper, Passion Fruit and Cilantro

Serves 4-6

Ingredients
  

  • 4 garlic cloves , chopped
  • 2 tablespoons fresh ginger , chopped
  • 1 fresh red chili pepper , chopped
  • Seeds and pulp from 1 passion fruit
  • 1 tablespoon fresh lime juice
  • 1- pound extra-large shrimp
  • 1/4 cup extra-virgin olive oil
  • Salt and freshly ground black pepper

Instructions
 

  • Put the first 5 ingredients in a large bowl and stir to combine.  Add the shrimp, season with salt and pepper and toss.  Cover and refrigerate for 1-2 hours.
  • Heat a large pan over medium-high heat.  Add the marinade and the shrimp to the pan and, stirring, cook for 3-4 minutes or until just cooked through.  Remove from the heat.
  • Arrange the shrimp on individual plates and sprinkle the cilantro over the top.  Serve immediately.
