Littleneck Clams with Garlic and Steamed in a Chive and Parsley Vinaigrette

Serves 2-4
A simple chive and parsley vinaigrette add a delicious flavor to these steamed littleneck clams.  Pair this dish with warm crusty bread to soak up the liquid.

Ingredients
  

  • 1 tablespoon extra virgin olive oil
  • 4 garlic cloves , chopped
  • 2 pounds littleneck clams , scrubbed and washed
  • Recipe for Chive and Parsley Vinaigrette
  • 1 tablespoon chives , finely chopped
  • 2 tablespoons fresh flat-leaf parsley , coarsely chopped
  • Juice of 1 lemon
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup extra virgin olive oil

Instructions
 

  • Heat a large saucepan over medium heat.  Add the garlic and cook for 1 minute, stirring.  Add the chives, parsley, lemon juice, vinegar, salt, and pepper and olive oil and bring to a simmer.  Increase the heat to medium-high and add the clams.  Cover and cook until the clam shells have opened, about 7-8 minutes, making sure not to overcook.
  • Ladle the clams into your favorite serving piece or into individual bowls.  Pour the liquid in the saucepan over the clams.  Serve immediately.
