
Littleneck Clams with Garlic and Steamed in a Chive and Parsley Vinaigrette
Serves 2-4A simple chive and parsley vinaigrette add a delicious flavor to these steamed littleneck clams. Pair this dish with warm crusty bread to soak up the liquid.
Ingredients
- 1 tablespoon extra virgin olive oil
- 4 garlic cloves , chopped
- 2 pounds littleneck clams , scrubbed and washed

- 1 tablespoon chives , finely chopped
- 2 tablespoons fresh flat-leaf parsley , coarsely chopped
- Juice of 1 lemon
- 1 tablespoon red wine vinegar
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup extra virgin olive oil
Instructions
- Heat a large saucepan over medium heat. Add the garlic and cook for 1 minute, stirring. Add the chives, parsley, lemon juice, vinegar, salt, and pepper and olive oil and bring to a simmer. Increase the heat to medium-high and add the clams. Cover and cook until the clam shells have opened, about 7-8 minutes, making sure not to overcook.
- Ladle the clams into your favorite serving piece or into individual bowls. Pour the liquid in the saucepan over the clams. Serve immediately.
