Tuna, Tomato, and Chive Salad with Toasted Bread
Fresh chives provide a nice flavor to this simple salad. It makes a great light lunch while sitting outside on a late summer day and travels well for a picnic at the beach.Serves 1-2
Ingredients
- 6.7 ounces tuna fillets , drained
- 2 early girl or Roma tomatoes , halved and cut into large pieces
- 1/4 cup fresh chives , chopped
- 2 tablespoons extra-virgin olive oil
- Sea salt and freshly ground black pepper
- 2 thick slices of a baguette , toasted
- Lemon wedges for serving
Instructions
- In a medium bowl, add the tuna, chives, and olive oil. Season with salt and pepper and gently mix to combine. Add the tomatoes and gently toss to combine.
- Transfer the salad to individual plates. Drizzle a little olive oil over the toasted slices of bread and serve alongside the salad with the lemon wedges.
