Fresh chives provide a nice flavor to this simple salad. It makes a great light lunch while sitting outside on a late summer day and travels well for a picnic at the beach.Serves 1-2
2early girl or Roma tomatoes, halved and cut into large pieces
1/4cupfresh chives, chopped
2tablespoonsextra-virgin olive oil
Sea salt and freshly ground black pepper
2thick slices of a baguette, toasted
Lemon wedges for serving
Instructions
In a medium bowl, add the tuna, chives, and olive oil. Season with salt and pepper and gently mix to combine. Add the tomatoes and gently toss to combine.
Transfer the salad to individual plates. Drizzle a little olive oil over the toasted slices of bread and serve alongside the salad with the lemon wedges.
