Halibut with Herbs, Garlic and Orange

A combination of fresh herbs, orange and garlic enhance the flavor of the delicate halibut in this dish.
Serves 4

Ingredients
  

  • 1 1/2 pounds halibut fillet
  • 2 tablespoons fresh flat-leaf parsley , chopped
  • 2 sprigs rosemary , plus 2 tablespoons rosemary needles, finely chopped
  • 2 sprigs fresh thyme , plus 2 tablespoons thyme leaves, chopped
  • 8-10 garlic cloves , peeled
  • 1 Cara Cara orange , sliced thin and slices cut in half
  • 1/4 cup , plus 1 tablespoon extra-virgin olive oil
  • Sea salt

Instructions
 

  • Preheat the oven to 450°F.
  • Add the parsley, rosemary needles, thyme leaves and 1 tablespoon olive oil to a small bowl. Mix to combine. Coat both sides of the halibut with the herb mixture. Lay the rosemary sprigs in a small baking dish. Place the halibut on top of the rosemary. Put a couple of the orange slices and the thyme sprigs on top of the halibut. Arrange the remainder orange slices around the halibut and scatter with the garlic cloves. Drizzle with the olive oil and sprinkle with a little sea salt. Place in the oven and bake for 20-25 minutes.
  • Remove the halibut from the oven. Serve on individual plates with the orange slices and the garlic. Sprinkle with additional salt, if desired.
