Pasta with Squash Blossoms, Basil, Garlic, and Pine Nuts
This is a simple way to prepare your favorite pasta. Chopped summer squash blossoms, fresh basil, and garlic, turns this into a fresh tasting and delicious dish.Serves 4-6
12squash blossoms, stems and stamens removed, finely chopped
1/2cupfresh basil leaves, chopped or torn
4garlic cloves, chopped
2tablespoonspine nuts, toasted
1/2cupextra-virgin olive oil
12ouncesof your favorite dried spaghetti
Parmigiano Reggiano for serving
Sea salt and freshly ground black pepper
Instructions
Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until it is al dente. Drain the pasta, reserving 1 tablespoon of the water.
Heat the olive oil over medium-high heat. Add the garlic and cook for 1 minute, stirring. Add the squash blossoms, pasta, pine nuts, and reserved water. Season with salt and pepper and cook for 2 minutes, gently stirring until combined.
Transfer the pasta to individual bowls. Sprinkle with the basil and Parmigiano Reggiano over the top. Serve immediately.
