Peach, Tomato, and Greens Salad with Sorrel, Nasturtium, Almonds, Goat Cheese, and a Honey-Lemon Dressing

This is a wonderful salad to make for a casual dinner in the open air. It goes perfectly with grilled chicken.
Serves 4-6

Ingredients
  

  • 3/4 cup almonds , toasted
  • 4 cups salad greens
  • 2 yellow peaches , pitted and cut into wedges
  • 2 handfuls of cherry tomatoes , halved
  • 3 large leaf sorrel , torn into pieces
  • 2 nasturtium petals and leaves , torn into pieces
  • Dressing
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon wildflower honey
  • 7 tablespoons extra-virgin olive oil
  • Sea salt and freshly ground black pepper

Instructions
 

  • Put the lemon juice, honey, and olive oil in a small bowl or jar. Season with salt and pepper and whisk to combine. Set aside.
  • Put the salad greens in a medium bowl. Arrange the peaches, tomatoes, sorrel, nasturtium, and almonds over the top of the greens. Drizzle with the dressing and toss to combine. Sprinkle the goat cheese over the top.
  • Serve immediately.
